Winemaking: Organic grapes were sourced from a nearby organic grower nearby before being foot stomped and macerated for a short time. Fermentation with indigenous yeast in concrete tanks. Aged for 9 months before bottling with no fining, filtration or added sulphur.
This Wine: Natural white wine with a medium body and fresh acidity. Amazing concentration of ripe stone and tropical fruits with Mediterranean herbs and flowers. Salty pineapples spring to mind! The touch of Muscat brings a subtle aromatic element to the wine. Small production.
Notes on the Winemaker: Francesco Pesci moved from his native Italy to work under fellow countryman Manuel at Vinyer de la Ruca. After falling in love with Banyuls and the surrounding Roussillon landscape he got his hands on 2 hectares of vines and began producing his own wines under the name Les Âines Ailés (the winged donkeys!). His wines are elegant but also show a wonderful rustic edge and a beautiful purity of fruit.
