Winemaking: Organic Marselan grapes were harvested by hand. Fermented with indigenous yeast. Bottled before this process was complete in order to trap fizz inside the bottle (Ancestral winemaking technique - Pet Nat). No filtration, fining or added sulphur.
This Wine: A dark pink Pet Nat that represents the first sparkling wine ever made by Seb. Loads of fresh fruit and candied notes make this a great aperitif on a warm day.
Notes on the Winemaker: Sebastien Agelet previously sold his family's grapes to the local co-op until 2012 when he decided to take matters into his own hands. He is situated in the Hautes Corbières region of Roussillon where it is hot and dry but strong winds from the Pyrenees help retain freshness and acidity in the grapes. His wines are precise but full of life and energy.
