Winemaking: Organic Moscatel and Macabeo grapes were harvested by hand. Fermentation with indigenous yeast before being aged in barrel under a layer of flor (oxidative winemaking technique). Bottled with no filtration, fining or added sulphur.
This Wine: This is an oxidative wine that can be thought of as a dry Manzanilla sherry style wine with better acidity. The winemaking process has helped develop savoury and umami flavours that pair excellently with cheese or fish (including sushi).
Notes on the Winemaker: Samuel Párraga produces wines that are a true reflection of this regions climate and viticultural history. He works with native grape varieties to create dry, sweet and oxidative styles without ever adding sulphur.
