Winemaking: Organic Tai Rosso grapes were harvested by hand. Fermented for 10 days on the skins with indigenous yeast. Direct press Garganega and Tai Bianco juice was then blended in. Must from the initial harvest of Tai Rosso was added to cause a second fermentation inside the bottle. No fining or filtration and just a small amount of sulphur added.
This Wine: Natural sparkling wine that exhibits a hazy pink colour in the glass. This feels like lemonade infused with strawberries and raspberries. Really bright, fun and refreshing. This is the Italian sparkling style that sits somewhere between Pet Nat and Champagne method.
Notes on the Winemaker: Davide Xodo learnt winemaking in Bierzo and Chianti Classico before returning to his homeland in Vicenza to start his own project back in 2018. He works five hectares of vines and produces perfectly balanced wines that are fresh and fruit-forward. In September 2025, we visited his beautiful winery that looks out over the Colli Berici and were treated to an awesome BBQ!
