Winemaking: Organic grapes were harvested by hand before fermentation with indigenous yeast. The wine was rested on the lees for 9 months before being bottled where the second fermentation took place. Aged in bottle for a further 24 month before being disgorged. Small amount of sulphur used.
This Wine: Traditional method sparkling wine (Champagne style) that offers a great balance of fruit, body and spice supplied from the various different grape varieties used in the blend. Plenty of the brioche, biscuity character associated with this style of wine. Great as an aperitif or with food.
Notes on the Winemaker: The Daviau family have been winemakers in the Anjou region since the 17th century. Christophe now farms biodynamically using ancient winemaking methods and cultivates local grape varieties such as Cabernet Franc and Grolleau.
