Winemaking: Organic Grenache grapes from the Mataburro vineyards were combined with Mauzac grapes from 2P in a collaboration. Fermentation with indigenous yeast in stainless steel. The wine was bottled before fermentation was complete in order to create fizz in the bottle (ancestral winemaking technique - Pet Nat). No fining, filtration or added sulphur

This Wine: A sparkling wine made with both red and white grapes, the ultra rare Pet Nat collaboration between Mataburro and 2P is back for 2021 and tasting just as delicious as last year. Candied red fruit with a lemony zing. Snap it up whilst you can!

Notes on the Winemaker: Mataburro is the project of natural winemakers Laurent Roger and Melissa Ingrand in Rivesaltes which isn't far from Perpignan in the Pyrénées-Orientales region of Southern France. They make wines with amazing freshness considering the warm Mediterranean climate. Mataburro means Donkey Killer which refers to a railway that runs through the vineyard. When it opened in 1910, a train sadly killed 2 donkeys on the first day.
