Winemaking: Meunier grapes from vines between 100 and 65 years old were harvested by hand and fermented with indigenous yeast in a combination of oak and steel after a 1 day maceration. Disgorged in September 2021. No dosage, brut nature. Minimal use of sulphur.
This Wine: Impeccable rosé Champagne made from 100% Meunier grapes. This is fruit forward but complex with notes of pink grapefruit, bitter orange and dried herbs. Delicate and precise.
Notes on the Winemaker: The Bourgeois-Diaz family have been winemakers in the Marne department of Champagne for 4 generations and the vineyards have been certified biodynamic since 2007. Jérome Bourgeois and his wife Charlotte currently run the domain and produce precise and immaculate wines.
