Winemaking: Organic Pinot Noir grapes from a 1 hectare parcel in Burgundy were harvested by hand. Whole bunch infusion and fermentation with indigenous yeast. Aged for 9 months in old oak barrels. Bottled with no filtration, fining or added sulphur.

This Wine: Natural red wine from a special plot of Pinot in the Ladoix region of Burgundy. Light and floral with a beautiful intensity of red berries, minerals and a touch of something darker. Made in very small quantities. 

Notes on the Winemaker: Romuald Valot worked with conventional winemakers in Burgundy for many years but craved to make wine in a more natural way. With this in mind, he bought a small plot of vines in a remote part of Beaujolais and took on a dogmatic approach to organic farming, sometimes not even pruning. In the cellar, all the cuvées are made with the carbonic maceration technique using whole bunches. The resulting wines are full of character and energy and strike a beautiful balance between simple and complex.
