Winemaking: Organic and Biodynamic grapes were hand harvested and underwent 4-8 days maceration before fermentation with indigenous yeast. Ages on the lees in old wood for a year and bottled with no fining or filtration. Just a small amount of sulphur added on bottling.
This Wine: Light and fresh, dry white wine with great acidity. Citrus and grassy notes with a white pepper, the hallmark of high quality Grüner. Serve with fish, vegetables or salad. The name is in honour of the buzzards that fly around the vineyards and eat pests. Biodynamics at its best!
Notes on the Winemaker: Michael Gindl runs a biodynamic farm in the village of Hohenruppersdorf that has belonged to his family since 1807. It's a true eco-system and even the barrels come from oak and acacia trees in his own forest. His wines are authentic expressions of the grapes and region.
