Cider produced with apples sourced from independent, organic farmers in the north of Burgundy. Only 400 bottles produced.

No use of enzymes. All juice moved by gravity into tank and then barrel. Racked with the use of nitrogen. No added sulphur.

Notes on the producer: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. In 2021 they also made cider too! Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
