Winemaking: Organic Aligoté grapes from 75 year old vines were harvested by hand. Direct press before fermentation with indigenous yeast. Aged in old barrels for 18 months. No filtration, fining or added sulphur.

This Wine: Natural white wine made from two different plots of Aligoté grapes both planted in the 1940s. Christian feels that the two different terroirs balance each other perfectly for this cuvée. Very small production. 

Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
