Winemaking: Organic/biodynamic Aligoté grapes were hand harvested from two different plots. Fermentation in stainless steel (1/3) and old barrels (2/3) with indigenous yeast. Aged for 12 months and bottled with a touch of filtration and added sulphur.
This Wine: Still white wine with a high intensity of pure orchard and citrus fruit. There aren't too many winemakers that know and care more about the Aligoté grape than Sylvain. He is one of the 5 founding members of the Aligoteurs association that is dedicated to championing Burgundy's secondary white variety.
Notes on the Winemaker: Sylvain Pataille is an expert Burgundian winemaker who independently consults for over 20 other producers in the region but also uses biodynamic practices to farm his own 17 hectares in and around the Marsannay appellation. He has the rare ability to create reds and whites of equal prestige (and even rosé too) and uses minimal sulphur and new oak.
