Winemaking: Organic Chardonnay, Aligoté, Riesling and Sauvignon Blanc grapes were sourced from other growers.  Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, or filtration and just a touch of sulphur.

This Wine: Still white wine from Alice De Moor's negotiant project where she buys grapes from growers nearby or further afield. This cuvée includes Riesling from Alsace, Sauvignon & Chardonnay from Burgundy and Aligoté from their own vines. Clean and precise with delicate floral notes and a strong mineral edge. Very small production. 

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
