Winemaking: Organic Auxerrois grapes were harvested by hand. Fermentation with indigenous yeast. Aged in old barrels on the lees for 19 months. Bottled with no fining or filtration and just a tiny amount of sulphur.

This Wine: Natural white wine with great intensity and complexity thanks to the extended lees contact. Notes of lemon, oyster shell and minerals. Great with fish. 

Notes on the Winemaker: Jean-Pierre Rietsch is a natural winemaker in the village of Mittelbergheim, Alsace. His estate has been in the family for seven generations but wasn't used for vine cultivation until the 1970s. He has garnered a reputation as a legend in this area and when you try his wines, you'll see why. From rich and complex Riesling to traditional method sparkling wine and skin contact cuvées, his wide range has something for everyone.
