Winemaking: Organic Blaufrankisch and Pesecká Leánkar grapes were harvested by hand. The white grapes were crushed and spent 5 days on the skins. The red grapes were then added. Fermentation with indigenous yeast and the wine was bottled before this process was finished in order to trap fizz inside the bottle (ancestral winemaking technique - pet nat). Bottled with no fining, filtration or added sulphur.
This Wine: Sparkling Pet Nat made from a blend of red and white grapes, both with skin contact. This is very much on the fun side with bright notes of candied raspberry and lemon along with zingy acidity. Super fresh! The wine takes its name from the fact this region is known for attracting seagulls to its lakes despite being landlocked.
Notes on the Winemaker: Marek Uhnák studied winemaking in the Czech Republic before heading back to his home village of Čajkov in Slovakia to begin making his own wine. His vines are situated in the Caldera hills within the Nitra region which is made up of volcanic soils from the Sitno volcano. He produces wines with organic fruit and no or minimal sulphur additions.
