Winemaking: Organic Cabernet Franc grapes from 90 year old vines were harvested by hand and underwent whole bunch maceration for 10 days. Fermented with indigenous yeast. Aged in old barrels for 2 years. Bottled with no fining, filtration or added sulphur.

This Wine: Natural red wine with a medium body. Such a profound depth of dark fruit on the palate and still showing fresh acidity despite time in barrel and bottle. Best served with food. One of your last chances to get taste this wine as it will no longer be produced. 

Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
