Winemaking: Organic Cabernet Franc grapes from 70 year old vines on limestone soil were harvested by hand. 2 weeks whole bunch maceration before slow press into old oak barrels where it ages for 2 years. Bottled with no fining, filtration or added sulphur.
This Wine: Natural red wine with medium body and a touch of tannin. Blackberry, plum and blackcurrant fruit dominates with no flavours of oak but a long, savoury finish. Ready to drink now but will age very well. Best served with food
Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
