Winemaking: Organic Cabernet Sauvignon grapes were harvested by hand. De-stemmed before fermentation with indigenous yeast before being aged in barrel for 12 months and then demijohns for 24 months. Bottled with no filtration, fining or added sulphur.

This Wine: Full bodied natural red wine from the mountains around Malaga in southern Spain. Black fruit and spice is the order of the day with balsamic elements to support. Needs to be served with food.

Notes on the Winemaker: Samuel Párraga produces wines that are a true reflection of this regions climate and viticultural history. He works with native grape varieties to create dry, sweet and oxidative styles without ever adding sulphur.
