Vegan friendly wine

Winemaking: Organic Mallorcan grape varieties grown on red clay were harvested by hand. 2/3 de-stemmed, 1/3 whole bunches. Fermentation with indigenous yeast. Aged in tank for 6 months. No fining, filtration or added sulphur. 

This Wine: A litre of natural red wine made with grapes from the Majorcan village of Felanitx. This is delicate and light but with a great intensity and complexity of red fruit, and dried herbs. Great acidity and a salty, mineral finish. 

Notes on the Winemaker: We first became aware of Eloi around 2016 whilst he was working as a winemaker for 4Kilos in Mallorca. Despite the warm climate of the island, he was producing delicate but complex wines that brimmed with Balearic character. Later he moved into the cellar of Cati Ribot to focus on his own cuvées under the Sistema Vinari name. These wines offer even more personality and always find the perfect balance of wildness and precision.
