Winemaking: Organic grapes were harvested by hand. 10 day carbonic maceration. Fermentation with indigenous yeast. Aged in concrete for 6 months. Bottled with no filtration, fining or added sulphur. 

This Wine: Natural red wine with a medium body and soft tannins. Fresher than your average Fitou with wild red fruit flavours and great acidity. Can work with or without food. 

Notes on the Winemaker: Céline & Alexandre Peyrein produce natural wine in the Hautes Corbieres area of the Languedoc in the south of France. The vines are generally at high elevation which retains freshness in the wine and everything is farmed according to biodynamic principles.
