Winemaking: Chardonnay grapes were harvested by hand and fermented with indigenous yeast. This Champagne is made up of 2014, 2015 and 2016 vintages and was disgorged in November 2019. No dosage, brut nature. Minimal use of sulphur.
This Wine: Rich and full Champagne with a fine balance of fruit and savoury notes. You get a strong mineral impression which adds to the complexity. High acidity and bone dry due to the zero dosage.
Notes on the Winemaker: The Laherte brothers Thierry and Christian brought Thierry's son Aurélien on board in 2002 and he now heads up the winery making him the seventh generation to do so. He is part of the new wave of Champagne producers focussing on natural winemaking and he only uses fungicides when absolutely necessary but prefers biodynamic practices.
