Winemaking: Organic Chardonnay grapes from a south-west facing premier cru vineyard were harvested by hand. Fermented with indigenous yeast in tank. Extended ageing on fine lees in a combination of tank and old barrels. Bottled with no fining, or filtration and just a touch of added sulphur.
This Wine: Outstanding Chablis from one of the most sought after names in the region. The long ageing has resulted in a deep and complex white wine that is still driven by acidity. Citrus and stone fruit flavours dominate with a developed honey note running throughout. Drinking amazingly well now but still age-worthy.
Notes on the Winemaker: Thomas Pico originally worked in his family domain where he convinced his father to move to organic farming in the mid-2000s. He later trained with Alice de Moor before starting his own project where he also acquired his old family vines. The wines are fuller and more complex than your average Chablis as Thomas prefers to achieve full ripeness on the vine before extended élevage.
