Winemaking: Organic Chardonnay grapes were harvested by hand. Fermented with indigenous yeast in tank. Extended ageing on fine lees in a combination of tank and old barrels. Bottled with no fining, or filtration and just a touch of added sulphur.

This Wine: Outstanding natural white wine made in Thomas Pico's style of full body but energetic acidity. An array of minerals combine with lemon, grapefruit and floral elements to create a beautiful Chablis. Best served with food. 

Notes on the Winemaker: Thomas Pico originally worked in his family domain where he convinced his father to move to organic farming in the mid-2000s. He later trained  with Alice de Moor before starting his own project where he also acquired his old family vines. The wines are fuller and more complex than your average Chablis as Thomas prefers to achieve full ripeness on the vine before extended élevage.
