Winemaking: Organic Chardonnay grapes were hand harvested before fermentation with indigenous yeast. Aged for 10 months in old barrels. Bottled with no filtration, fining or added sulphur.
This Wine: Natural white wine with an oxidative character. Very high quality grapes grown within the Chateau Chalon area were used which results in a complex and intense Chardonnay with notes of preserved lemon, bruised apple and almond. Best served with food.
Notes on the Winemaker: Céline started Les Dolomies in 2008 and was joined by her husband Steve in 2016. The duo now farm 5.5 hectares of vines around Jura and work with indigenous grape varieties with minimal intervention.
