Winemaking: Organic Chadonnay grapes were harvested by hand. Fermented with indigenous yeast. Aged for 12 months in old oak. No filtration or fining. Minimal sulphur additions.

This Wine: Natural white Burgundy made from a small plot of vines in Puligny-Montrachet. Medium bodied with a focus on minerals and citrus alongside honeyed and floral notes. Less than 2000 bottles produced.

Notes on the Winemaker: Domaine Derain began in 1988 when Dominique & Catherine Derain purchased vines in the Burgundian town of Saint-Aubain. Everything has been farmed according to organic and biodynamic principles ever since. The sublime cuvées are the perfect examples of natural Burgundy wines. The winery is now run by Julien Altaber & Carole Schwab who previously worked under the Derains.
