Winemaking: Organic Chardonnay grapes were sourced from another grower. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, or filtration and just a touch of sulphur.

This Wine: Still white wine from Alice De Moor's negotiant project where she buys grapes from nearby growers. Great concentration and balance of citrus, green apple, white flowers and minerals.

Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
