Winemaking: Organic Chardonnay grapes grown on clay soils were harvested by hand. Whole bunch direct press and fermentation with indigenous yeast in old barrels. Aged in barrel before bottling with no filtration, fining or added sulphur.
This Wine: Natural white wine made in the topped up method (non-oxidative). This is a pure and rich Chardonnay with no flavours of oak. A strong mineral character with a lively and direct acidity. Arguably the cuvée from Les Bottes Rouges that has the greatest ageing potential but is also great to drink now.
Notes on the Winemaker: Jean-Baptiste Menigoz is a natural winemaker in the village of Arbois who learnt some of his skills working at the great Stéphane Tissot. He works alongside Florien Kleine Snuverink, farming 7 hectares of vines spread across the Arbois and Côtes du Jura appellations. Like many winemakers, the simple mission is to make wines they enjoy drinking.
