Winemaking: Organic Chardonnay grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels. Bottled with no filtration, fining or added sulphur.
This Wine: Rich and round Chardonnay made in the "ouille" topped up style (non-oxidative) so the focus is on minerals and citrus fruit but there are still some subtle nutty elements at play. A powerful white wine that is best experienced with food.
Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
