Winemaking: Organic Chardonnay grapes were harvested by hand. Whole bunches were pressed directly and then fermented with indigenous yeast. Aged in old barrels for one year. No filtration, fining or added sulphur.
This Wine: Natural white wine with a medium body. I discovered this over a dinner at the Dandelion restaurant in Paris and was blown away. So much texture along with this amazing mineral influence. Plenty of citrus and stone fruit underneath with perfect acidity. Outstanding. Best served with food. Only 931 bottles produced.
Notes on the Winemaker: Les Bariolés is an exciting young estate in Auvergne, founded in 2022 by Claire Freist and Edoardo Veltroni. Having honed their craft in prestigious Burgundian cellars, the couple settled on 5 hectares of high-altitude volcanic slopes in Chalus (600m above sea level). Working organically and biodynamically with Chardonnay, Pinot Noir, and Gamay, they craft pure, additive-free wines with no sulphur additions. The result? Strikingly energetic, precise natural wines bursting with volcanic minerality, fresh fruit, and immense precision.
