Region: Saint-Aubin, Côte de Beaune, Burgundy, France
Wild Scale: 2/5
Vegan friendly wine
Winemaking: Organic Chadonnay grapes were harvested by hand. 90% de-stemmed and then fermented with indigenous yeast. Aged for 12 months in old oak. No filtration, fining or added sulphur.
This Wine: Natural white wine made from very high quality Chardonnay grapes grown close to Puligny-Montrachet. There are no noticeable influence of oak on the palate and instead the focus is pure fruit and minerals. Some subtle oxidative notes of baked apple. Full and rounded so best served with food.
Notes on the Winemaker: Domaine Derain began in 1988 when Dominique & Catherine Derain purchased vines in the Burgundian town of Saint-Aubain. Everything has been farmed according to organic and biodynamic principles ever since. The sublime cuvées are the perfect examples of natural Burgundy wines. The winery is now run by Julien Altaber & Carole Schwab who previously worked under the Derains.
