Vegan friendly wine
Winemaking: Organic grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels that were not topped up. This encouraged the growth of a layer of flor which the wine was aged under for 18 months. Bottled with no filtration or fining and just a touch of sulphur.
This Wine: Natural white wine, rich and round character. Oxidative notes of cooked and bruised apple, honey and hazelnut. A versatile companion to many food dishes including those with cheese, mushrooms and fish. This is the 2018 vintage which is now drinking amazingly after a few years in the cellar.
Notes on the Winemaker: Domaine Chevassu-Fassenet is run by Marie-Pierre Chevassu is the woman behind Domaine Chevassu-Fassenet in the Château-Chalon apellation of Jura. She sees to 4.5 hectares of Chardonnay, Savagnin and Pinot Noir vines and hails from a strong farming bloodline with her mother's side being vignerons and her father's side rearing cows.
