Winemaking: Organic Chardonnay grapes grown on south facing slopes were harvested by hand. Fermentation with indigenous yeast. Aged for 9 months on the lees in stainless steel tanks. No fining or filtration and just a small amount of sulphur added at bottling.
This Wine: Natural white wine with a medium to full body. Elegant and balanced with a richness that is matched with fresh acidity. No oak flavours and instead your are treated to a purity of fruit and minerals followed by a subtle honeyed note. A hidden gem from Burgundy!
Notes on the Winemaker: Jean-Paul Pando is a young winemaker who set up his project in Vezelay back in 2022. Previously he worked in the restaurant world where he was introduced to natural wine. Now he farms nearly 3 hectares of vines in this northern region of Burgundy
