Winemaking: Organic Chardonnay grapes from a single plot were harvested by hand. Whole bunches were pressed into barrels where fermentation with indigenous yeast took place. Aged in barrels for 12 months. No filtration or fining. Small amount of added sulphur on bottling.

This Wine: Natural white wine with a medium to full body. Toasty brioche notes are complimented by peach, apricot and citrus fruit flavours. Spice, minerals and oak influence bring extra complexity. If you are into full and textured whites, this is for you Only 1200 bottles produced.

Notes on the Winemaker: Patrick Sullivan and his wife Megan produce wine in the rural region of Gippsland, Victoria. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir. He dedicates most of his time in the vineyard to help his fruit reach its highest potential which then allows a more hand off approach in the winery.
