Winemaking: An organic field blend of grapes grown on sandy soils was harvested by hand. Fermented with indigenous yeast in stainless steel tanks. No filtration, fining or added sulphur.
This Wine:
Notes on the Winemaker: Ramón Saavedra makes natural wine in the small village of Graena on the northern side of the Sierra Nevada in southern Spain. Despite the desert-like climate here, he retains fresh acidity in his wines due to the high elevation (1000m above sea level) and cool nights. Ramon named his winery Cauzón as it means land of sand in Arabic which reflects the history and soil type of this region. His wines a rustic but very well made and showcase this Andalusian terroir perfectly.
