Winemaking: An organic field blend of Chardonnay and Pinot Noir grapes grown in Crouch Valley was harvested by hand. Direct press and dermentation with indigenous yeast. Aged in large new oak barrels for 24 months. Bottled via gravity and in line with the moon calendar. No fining, filtration or added sulphur.

This Wine: Natural wine from one of the best producers in the UK. White wines from the Jura were in the inspiration behind this new cuvée from Dan and Nic. A new foudre barrel was used to age the wine in order to increase body and complexity to match the high acidity so the wine definitely has some oak influence. A gastronomic wine that you should take your time over.

Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
