Winemaking: Organic Chardonnay, Pinot Gris and Auxerrois grapes were harvested by hand in 2023. Fermentation with indigenous yeast to create a base wine. In 2024 some juice from the new harvest was added to this in order to start a second fermentation in the bottle (but less juice that the traditional Champagne method). Disgorged in November 2025. Tiny amount of sulphur on bottling.
This Wine: A brand new natural sparkling white wine from Jean-Pierre that differs slightly in style from his iconic penguin Crémant. Lighter fizz and leaner body here and therefore more on the refreshing side. Drinks somewhere between Pet Nat and Crémant. Citrus and orchard fruit with a touch of that leesy, brioche character. Great value.
Notes on the Winemaker: Jean-Pierre Rietsch is a natural winemaker in the village of Mittelbergheim, Alsace. His estate has been in the family for seven generations but wasn't used for vine cultivation until the 1970s. He has garnered a reputation as a legend in this area and when you try his wines, you'll see why. From rich and complex Riesling to traditional method sparkling wine and skin contact cuvées, his wide range has something for everyone.
