Winemaking: Organic Aligoté grapes were harvested by hand. Direct press and fermented with indigenous yeast in fibreglass tanks. Aged for 5 months in enamel vessels. Re-fermented in bottle (traditional sparkling wine making technique. Aged in bottle for 12 months. Zero dosage. No filtration or fining. Minimal sulphur additions.

This Wine: Immaculate sparkling wine made in the Champagne style but with Aligoté grapes. I guess it's a Crémant but they're not calling it that. Green apples, citrus and a savoury brioche note combine very well to create something that punches above a lot of high end Champagne.

Notes on the Winemaker: Domaine Derain began in 1988 when Dominique & Catherine Derain purchased vines in the Burgundian town of Saint-Aubain. Everything has been farmed according to organic and biodynamic principles ever since. The sublime cuvées are the perfect examples of natural Burgundy wines. The winery is now run by Julien Altaber & Carole Schwab who previously worked under the Derains.
