Winemaking: Organic grapes were harvested by hand. Fermentation with indigenous yeast. Aged for 18 months in old barrels. No fining or filtration and just a small amount of sulphur added at bottling.
This Wine: A medium to full bodied white wine with great complexity and intensity. The focus is crisp, green fruit with preserved lemon and a strong mineral elements. Some delicate floral touches and a subtle smokey note bring further complexity. Beautiful and serious wine from a winemaker with a deserved cult following in the Loire.
Notes on the Winemaker: Etienne Courtois is taking over the running of Les Cailloux du Paradis winery from his father Claude. The family produce natural wines near the village of Cheverny in the Loire Valley and the focus is very much on indigenous and rare grape varieties, some of which are very unique to this area. No synthetic chemicals are used in the vineyard. Extended barrel ageing is preferred in the cellar which usually results in precise and powerful wines.
