Winemaking: Organic Chardonnay and Savagnin grapes were hand harvested and spontaneously fermented with indigenous yeast. Bottled with no filtration or fining and just a tiny amount of sulphur.
This Wine: Round and rich white wine with a medium body and superb acidity. made in the topped-up Ouille style and therefore not oxidative. Made from grapes grown in what many consider to be one of the best plots in the Jura, Etoile. This vineyard is famed for its star-shaped fossils in the soil, hence the name.
Notes on the Winemaker: Ludwig Bindernagel & Nathalie Eigenschenk worked in paris before planning to start making wine in Burgundy. The prices of land forced them to take their next best option, the Jura where they now grow grape sin one of the most famous vineyards of this region, Etoile AOC.
