Winemaking: Biodynamic Chenin Blanc, Grolleau Gris and Sauvignon Blanc grapes were purchased from a nearby organic grower. Fermentation in stainless steel with indigenous yeast. No fining, light filtration and small amount of sulphur on bottling.
This Wine: Natural white wine with a light to medium body. Fresh and zesty with citrus, floral and herbal notes. Lovely balance of acidity and ripeness. This cuvée always represents a great wine for everyday drinking with touch of elegance.
Notes on the Winemaker: Clémant Baraut hails from Bordeaux but ended up in the Loire valley in 1989 whilst working as an oenologist. After acquiring vines in the historic Savennières appellation, he began promoting biodynamic farming methods which helped champion the potential of this now renowned terroir. Clémant wanted to show just how powerful and complex Chenin Blanc can be so he also helped steer the wines of this region back to a dryer, non-botrytised style, after sweet wines had previously been so popular.
