Winemaking: Organic Chenin Blanc grapes from 60 year old vines were harvested by hand. Fermentation with indigenous yeast. Aged for 2 years in amphora vessels. Bottled with no fining or filtration and just a touch of sulphur.
This Wine: Classy, elegant Chenin Blanc with the benefit of time in amphora and then bottle. Full of tension and precision, this is rich and round with profound salinity. The fruit has developed alongside a touch of integrated oak flavours and the fresh acidity remains. Best served with food.
Notes on the Winemaker: Pauline Morrain and Laurent Troubat were travelling together in Australia and working at a winery when they decided that this lifestyle would be their future. After studying in Burgundy, the couple worked with Melaric in the Loire valley and met Philippe Gourdon, the natural winemaking legend of the region. He leased them their first vines and the rest is history!
