Winemaking: Organic Chenin Blanc grapes were harvested by hand. Direct press before fermentation with indigenous yeast. Aged in underground tanks for 10 months. No filtration, fining or added sulphur.

This Wine: Natural white wine with a light to medium body. Electric citrus fruit, green apple, pear and minerals. Full of tension and on the leaner side of Chenin but still with a suggestion of roundness on the finish

Notes on the Winemaker: Babass is a legendary name in the world of natural wine. Winemaker Sebastién Dervieux set up this domaine (now 4 hectares) in the Loire back in 2011 after previously working with Patrick Desplats as Domaine des Griottes. He produces wild wines from local grape varieties that reflect terroir and vintage authentically.
