Winemaking: Organic Chenin Blanc grapes were hand harvested and fermented with indigenous yeast. Aged for 2 years in old barrels. No filtration and just a small amount of sulphur on bottling.

Notes on the Winemaker: Melanie Hunin and Aymeric Hillaire is the duo behind the Melaric winery in the area of Saumur-Puy-Notre-Dame where they work 4 hectares of vines. They produce classy wines from local grape varieties with minimal sulphur additions
