Winemaking: Organic Chenin Blanc grapes from young vines were harvested by hand. Direct press before fermentation with indigenous yeast. Bottled before this process was complete in order to trap fizz inside the bottle (ancestral winemaking technique - pet nat). Aged for 12 months in bottle on the lees. No fining, filtration or added sulphur. 

This Wine: Sparkling white wine made in the Pet Nat method but has plenty of depth. Balances savoury and fruit flavours perfectly. Lemon, peach and minerals. Great with or without food. 

Notes on the Winemaker: Renaud Guettier is the man behind La Grapperie, located in Loire village of Bueil-de-Touraine. There he farms 5 hectares of old vines and produces intense and elegant wines that are always aged in old barrels.
