Winemaking: Organic Chenin Blanc grapes from 70 year old vines were hand harvested and underwent whole bunch fermentation with indigenous yeast for 1 week. Pressed into tank for a short time before being bottled with no filtration, fining or added sulphur.
This Wine: Natural skin contact wine with a peachy, gold colour in the glass and a textured body. Tropical fruit aromas and a kick of salinity. A funky and unique expression of the Chenin Blanc grape variety.
Notes on the Winemaker: Son of Loire legend Olivier Cousin, Baptiste initially studied under his father but has now been producing his own wines for over 10 years. He organically farms just under 5 hectares with help from his partner Gael and their horses. The wines are unique and full of character, often displaying rustic elements alongside bright, energetic fruit.
