Winemaking: Organic Chenin Blanc and Chardonnay grapes were hand harvested and fermented with indigenous yeast. The wine was bottled before fermentation finished (ancestral method) to create a sparkling Pet Nat wine. Aged on the lees for 18 months. No filtration and just a small amount of sulphur on bottling.
This Wine: This sparkling wine's style sites somewhere between Pet Nat and traditional method (Champagne). It is fruit forward but has lots of body and texture from the extended lees contact. Green apple with biscuity and brioche flavours. Works well with umami food such as cheese or fish.
Notes on the Winemaker: Melanie Hunin and Aymeric Hillaire is the duo behind the Melaric winery in the area of Saumur-Puy-Notre-Dame where they work 4 hectares of vines. They produce classy wines from local grape varieties with minimal sulphur additions
