Winemaking: Organic Cinsault grapes were harvested by hand. 50% were foot crushed whilst the rest underwent whole bunch maceration. Fermentation with indigenous yeast.  Bottled with no fining, filtration or added sulphur.

This Wine: Natural red wine with a light body. No fizz despite the crown cap. Amazing concentration of red berries and violets. We fell in love with this instantly at a tasting. So complex and fragrant despite its delicate nature. The best combination!

Notes on the Winemaker: L'Absurde Génie des Fleurs is the winemaking project of Tom Gautier & Miha Trifa who set up shop in the Languedoc town of Bedarieux. Tom previously worked in the wine bars of Nantes whilst Miha, who is from Romania, spent time living in Paris where she fell in love with natural wine. The business partners now produce light but amazingly concentrated wines from local varieties such as Cinsault, Aramon and Terret.
