Winemaking: Organic Cinsault grapes were purchased from an organic grower in the Languedoc. 50% de-stemmed, 50% whole bunches. Macerated for 6 days and fermented with indigenous yeast in tank. Bottled 10 months later with no fining, filtration or added sulphur.
This Wine: Natural red wine with a light body that showcases the fresh fruit and herbal side of Cinsault. Plenty of subtle complexity to be enjoyed here alongside the juicy, uplifting character. Low in alcohol and ready for the fridge.
Notes on the Winemaker: Anne Paillet is a negotiant winemaker in the Loire valley but sources her fruit from the south of France in the Gard department of the Languedoc where she buys the entire annual yield from organic grower Christopher Beau. With a focus on producing light and fresh styles of wine, Anne harvests early and uses a variety of different winemaking techniques to achieve her goal.
