Winemaking: Organic Cortese grapes from 20 year old vines were crushed and spent 3 days on the skins. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining or filtration and just a small amount of sulphur.
This Wine: The wine previously known as Rube Bianco, this is a white natural wine with a touch of skin contact that adds texture and complexity. Great everyday wine that offers incredible value for money. New label courtesy of Ed Curtis.
Notes on the Winemaker: Valli Unite has been an organic co-operative in Piedmonte since 1981. The winery is powered with solar energy and the team take a holistic approach to farming and winemaking. In our opinion, they produce the best value natural wines out there.
