Winemaking: Organic Croatina grapes grown on volcanic soils 400m above sea level were harvested by hand. De-stemmed before fermentation with indigenous yeast for one month in stainless steel tanks that are kept outside. Aged in old oak barrel for one year. Bottled with no fining, filtration and just a small amount of sulphur.
This Wine: A red wine with medium to full body but which is still fruit forward with no flavours of oak. Great acidity comes from the elevation of the vines. This is a serious red that is best enjoyed with food. Only 800 bottles produced.
Notes on the Winemaker: Ivano & Paola Barbaglia set up their natural winemaking project after the former suffered a stroke in 2011. He lost some use in one hand so decided to head in a new direction. The couple work 4 hectares of vines in the Boca region of Piedmont and produce wines from native grapes Croatina and Nebbiolo.
